I got mustard greens in my locally sourced veggie & fruit box this week, which was filled with a SLEW OF LEAFY GREEN THINGS.

Mustard Greens are KINKY

After staring at pictures on the internet of mustard greens and ensuring the giant head of kinky leafed chaos in my fridge matched, I came up with this recipe below:

Ingredients

  • 1 pat Butter 1 pat
  • tablespoon Broth ~3 tablespoons
  • Mustard Greens rinsed, dried, cut into 2" pieces
  • tablespoon Lemon Juice ~a few tablespoons
  • Flaxseed Oil ~tablespoon
  • Walnuts
  • Parmesan Cheese

I ate them all without taking a picture, but imagine something that looks like spinach with walnuts mixed in. Nothing special to look at.

But TASTE wise, VERY different than spinach. They have a bit of a tang/zest/spice to them (according to Wikipedia, “horseradish/mustard zing”). I also tried blanching some concurrently but that method took all the tang out of them and left behind some slimy ooze. Considering slinging some of that slime onto a cat.

The below stats says it serves two (which it DEFINITELY does if it is served as a side). I ate the entire thing as my meal. Look at all that fiber and fat! Mmm mmm! About 4 net carbs per serving, which is mostly from the walnuts.

If Vegetarian – please add in a few extra carbs for veggie broth. If you are a meat eater, consider using lard instead of butter (or lard AND butter! MM!), which would be great to cook these in as well. If watching calories, omit/reduce flaxseed oil and add a bit more lemon juice.
