Chocolate Mousse (with secret vegetable ingredient)
Low carb chocolate mousse
- 2 Eggplant Small to Medium
- Cocoa Powder
- Liquid Stevia
Scoop insides of eggplants and put into a blender (Vitamix preferred for extra smoooothness)
Blend until super smooth
Scoop eggplant out of blender and into bowl - add several tablespoons of cocoa powder and stir until blended
Add several drops of stevia, stir until blended
Repeat the cocoa powder/stevia until you get a combination that is to your tastes
If adding the avocado, blend into mixture - it will make the mousse a little bit more 'creamy/light' versus 'rich/fudgy' and adds a bit of extra fat.
