Low Carb Stir Fry "Rice"
Low Carb Stir Fry with cauliflower rice - comfort food voila!

- 1 tablespoon Coconut Oil
- 1 Onion
- Bok Choy or whatever veggies you have lurking in the crisper
- 1 head Broccoli
- Riced Cauliflower microwaved for two minutes ahead time
- 1 bag Shrimp i thawed out some from my trader joe's freezer bag o' pre cooked shrimp
- Walnuts
- 1 Egg
- 3 tablespoons Soy Sauce Or to taste
- 1 teaspoon Curry Powder to taste
- teaspoon Salt N' Pepah to taste
Saute the onion in coconut oil for about 3 minutes, then throw in the bok choy and broccoli and let that saute to soften up for a bit.
Add in the shrimp (mine were pre-cooked), walnuts, soy sauce, then cook an egg in there, let simmer for under two minutes.
Add in the "rice" and stir
Add more soy sauce, salt, pepper, dash of curry powder (I love this stuff).
